Pumpkin Spice Pancakes (GF/V)

Protein Pancakes with Pumpkin Spice protein powder are the perfect way to start your morning! Or your evening, which I do often as well!


Ingredients:

  • 1 ripe banana
  • 3 scoops protein powder ( I use the Isagenix pumpkin spice or creamy vanilla for these )
  • ¾ cup rolled oats
  • 1 tsp vanilla extract
  • 2 tsp baking powder
  • 2 tsp cinnamon
  • ½ cup almond milk
  • 1 egg or flax egg (1 tbsp flaxseed meal, 2.5 tbsp water and left to sit for 10 minutes for consistency)

Makes 6 small – medium pancakes


Steps:

  1. Beat all ingredients together in a large bowl with an electric hand mixer for approximately 1 minute.
  2. Fry in coconut oil in large pan over medium heat.

Optional: Serve with butter and maple syrup if desired.
