Pumpkin Spice Pancakes (GF/V)
Protein Pancakes with Pumpkin Spice protein powder are the perfect way to start your morning! Or your evening, which I do often as well!
- 1 ripe banana
- 3 scoops protein powder ( I use the Isagenix pumpkin spice or creamy vanilla for these )
- ¾ cup rolled oats
- 1 tsp vanilla extract
- 2 tsp baking powder
- 2 tsp cinnamon
- ½ cup almond milk
- 1 egg or flax egg (1 tbsp flaxseed meal, 2.5 tbsp water and left to sit for 10 minutes for consistency)
Makes 6 small – medium pancakes
- Beat all ingredients together in a large bowl with an electric hand mixer for approximately 1 minute.
- Fry in coconut oil in large pan over medium heat.
Optional: Serve with butter and maple syrup if desired.
